I get asked for this recipe alot.
Spanish Casserole
2 lbs. gr. meat 1 jar Salsa 1 can corn (drained) Tortillas or chips, slightly crushed sour cream (optional) olive oil
Cook gr. meat in frying pan, then mix in bowl with corn & salsa.
Coat bottom of casserole dish with oil.
Layer tortillas (or chips), mixture, tortilla, mixture, tortilla as topper.
Preheat oven 350 degrees. Cover, cook for 30 min.
Top with sour cream.

that sounds good... here's one for you.
(call it what you like)
4-5 med. boneless pork chops 1 med. green pepper (sliced in thin strips or chopped) 1 med. onion (slice and then cut slices in half) 1 packet of dry onion soup mix 1 reg. can of GOLDEN mushroom soup (NOT cream mushroom) 1 tblsp worcestershire sauce 2 tblsp olive oil (or the oil of your choice)
Heat oil in skillet and saute peppers and onions until soft but still abit crisp Add pork chops and cook them on both sides until just slightly underdone Mix mushroom soup with one can of water, add dry onion soup and worcestershire sauce and mix well. Add to chops and veggies and stir well. Cover and simmer approx. 20 mins, until chops are completely done.
Serve over fried potatoes... or rice... or noodles.

SEAFOOD PASTA
20 minutes/5 minutes prep
serves 3
7 ounces Angel Hair pasta 25 medium pre-cooked shrimp without tail 8 ounce package Lobster chunks 1 cup frozen peas 1 can Campbell's Cream of Shrimp soup Spices of your choice (we use red pepper flakes, cajun spice) Parmesan Cheese flakes
Prepare pasta in boiling water. About 3 minutes before pasta is done, add shrimp, lobster and peas to pasta in the boiling water. When pasta is done, drain mixture well. Put mixture back in pot and add soup and spices. Mix well and serve with Parmesan cheese flakes.

Chicken Won Ton Cups
You will need:
6 large boneless, skinless chicken breasts 2 cups of any kind of shredded cheese 1 bottle of Ranch Dressing 1 package of Won Ton Wraps (or Egg Roll Wraps - Cut into 4's) Cup Cake Pans
Boil chicken until cooked through Chop or shred chicken (to your liking) Mix Ranch Dressing and Chicken together until moist Using cup cake pans spray with Pam, place one won ton wrap, pressed down into a cup like shape. Bake Won Tons in the oven at 375 for a few mins (until golden brown) Spoon Chicken/Ranch Combination into cooked Won Ton Cups. Sprinkle with cheese Bake until cheese is melted.
These are great for parties as appetizers!

(You can put anything in these cups other then chicken/ranch. We've done pizza sauce, salsa, hamburger, etc. The only problem is, anything that has a lot of moisture, will take away from the crisp of the Won Ton.)
